Why We Keep an Almanac

An almanac used to be a practical thing. Tide tables. Planting dates. The kind of record kept not because it was interesting, but because it was useful — a way of paying attention to time passing, and writing down what you noticed.

We keep one for the same reason. Not as a marketing calendar, not as a place to announce things. As a place to write down what we notice — about extraction, about restraint, about the difference between a system and a routine.

Coffee as ritual. Objects as extensions. Systems over noise. That line has sat at the top of this site since the beginning, and an almanac is what happens when you decide to actually explain what it means, one entry at a time, instead of just repeating it.

Some entries will be process notes — what changes when a concentrate rests in a barrel for longer than planned, why a pour structure matters more than a recipe name. Some will be shorter. Occasionally, there will be nothing to say, and we will say nothing, rather than fill the space.

This is entry 001. Consider it the bloom — the first, smallest pour, before anything real begins.
